Hanamizuki – A Subtle and Secretive Tea Café

Hanamizuki is one of the most favorite tea café for me. The café is located in an urban part of Numazu city secretively.

The tea café serves some specialty teas corrected from sophisticated tea estates based on the preference of the master.

Tea estates dealt in the café are written in the menu as follows

  • Sencha from Tochizawa region on the upper stream of Abe River
  • Gyokuro and matcha from Asahina on the mountainside of Fujieda Tea Estate
  • As for black tea, she brings ‘benifuki’ cultivar from some estates according to seasons or their characteristics.

We ordered Sencha made in Tochizawa region and ‘Benifuki’ black tea with “matcha shiruko”, which is sweet beans soup mixed with matcha, and traditional “Wagashi” confection.

Sencha green tea made in Tochizawa region, it is processed by light steaming and sensitive rolling. Thin needle-like shape indicates the highly sophisticated skill of the tea farmer.

The owner brought the set and prepare the Sencha in front of us. She brewed the Sencha till the final dew was dropped, which has condensed umami and aroma.

The color of infusion is transparent and very pale yellowish green. On the other hand, the flavor is so rich. Umami gains gradually its presence on my tongue after getting in mouth. Herbal and floral fragrance come up to my nose after sipping soon. Fresh finish makes me so delightful.

After 1st infusion, the appearance of Sencha remains still needle-like shape and deep green color.

I tried brewing 2nd infusion, using the tea ware to adjust water temperature. Pouring hot water into the tea ware, water temperature generally gets down about 10 degree Celsius. I poured the water about 70 degree Celsius into the tea pot. 25 2nd brewing by oneself

The infusion of 2nd brewing as follow. The color gets deeper. The harmony of astringency and umami is delightful. And medium bodied finish is my preference.

After 3rd infusion, the leaves still remains green color, indicating how vivid the ingredient tea shoots!

In addition to the Sencha, confections are also fantastic!

Matcha shiruko, the sweet potage of beans with matcha, is cooked very carefully.
10 Matcha Shiruko

It is double layered. The bottom layer is orthodox Azuki beans potage and shaped like mountain. The top layer of white beans thick soup mixed with matcha softly put on the Azuki potage layer. And the top of Azuki potage mountain come up at the center, as shown in the picture.

Moderate sweetness and slight salty taste of Azuki potage harmonizes with the richness and tannin derived from matcha. It’s a great work!

Wagashi confection is shaped with modeling the moon and related folk tale, where rabbits prepare Mochi rice cake on the moon.

Corresponding to the folk tle, a rabbit preparing Mochi is depicted on the surface of Wagashi confection. Silver grass is also depicted because it is also representative of autumn season in Japan.

In addition to the teas and confections, we can enjoy seeing the exhibition of tea wares and other goods.
