Keemon Black Tea – My Sweet Ambers Pt.4

Keemon Black Tea is produced by TAKEUCHI Norifumi. The name of this tea is derived from his first name and the respect to the famous Chinese black tea “Keemun”.
Chinese characters forming his name can be read as “Ki Mon” also, because Chinese characters have multi- pronounces and meanings.

The outlook of Keemon black tea and its package.

This black tea has very gentle flavor and slight aroma like fruits. Its taste is slightly sweet and delicate, and less astringent, thus familiar to everyone. He had improved processes to realize the mild and smooth mouthfeel and sweet taste based on his hope that children might love to drink it. He is also highly motivated to sophisticate his skill to make teas, so he had studied the processes to produce black teas with Mr. Miura, the producer of Benifuki black tea introduced in the page of “Tea Shops and Products“.
He uses 2nd flush for this black teas. This may be one of the reasons of the familiar taste or light body. 1st flush has rich umami, resulting in denser taste and texture. For children, sometimes it would be felt as undesirable taste.
Above all, I think the gentle taste of Keemon Black tea is also derived from his tenderness.

02 KeemonBlackTeaInfusion-Takeuchi

Insufions of Keemon tea. 2nd infusion is left one and 1st infusion is right one. They take on nice bright tone.

In my opinion, the color of infusion is very brilliant, clear amber or slight scarlet, very nice in red tinge. If possible, I would like to pour it in a wine glass.
In addition to his tea production technique, he has various skills such as sweets making, cooking and fishing. On his blog, we can see many photos of fishes or his cooking. And Ms. Kanazawa shows marron glace in Japanese style and soft cookies made by him on her blog.

04 TakeuchiExplanation

Mr. Takeuchi explained the characteristics of “Keemon tea” to merchants and a chef with using his explanatory materials.

He emphasizes the mild flavor and texture on the business meeting. A merchant evaluates that this black tea has a sweet caramelly aroma with long finish. He recommends this tea for a usual use and blending with honey and lemon.
