ChaChaNoMa brews specialty Japanese teas by the perfect way to each tea cultivar and terroir, with fancy cuisines of Japanese sweets.
This café serves cups of specialty tea by the unique style.
At first, loose leaf tea itself is served for the purpose of eating it. The “business card” of the tea is also brought at the same time, where the identity of the specialty tea is explained. The shop master recommends to enjoy tasting loose leaf tea itself.
In this day, I chose “Kinseikou” of an early cultivar “Kondo Wase” produced in Mariko region in Shizuoka city.
I could enjoy tasting the loose leaf tea, its toasty aroma and less astringency and long finish changing sweet gradually. It implies the sophisticated skill of the people concerned with this tea.
Then the shop master brewed the first infusion at the best condition, where the loose leaf tea was steeped in a small amount of water at low temperature by using a special apparatus “Kyusu” of thin flat type (the image of flat type).

I felt as if my tongue was dressed with the richness of umami and perfume.
Especially I’d like to emphasize the long finish of fantastic aroma. I felt fresh delicate fragrance with walnuts-like aroma for some minutes after swallowing.
The second infusion also surprised me by its umami remained. The tea leaves still had umami after 1st brewing. The balance of umami, delicate sweetness and astringency was so nice.
The third infusion was served with an ice, looked like a fancy cocktail. The harmony of bitterness and fresh green flavor was further enhanced by the coldness.
This shop serves some kinds of sweet cuisine, such as Japanese-style parfait, traditional confections etc.
The parfait I tried was served with forth infusion brewed to a large decanter.
The full-course of Japanese tea satisfied me perfectly.
This Japanese café “Cha Cha No Ma” is also strongly recommended!!
