Teas have a great potential to be applied for multihued usages, foods, sweet stuff, ice creams, food additives (mainly for coloring), medicines, and so on. Because of the possibilities of teas application, I’d like to write selfish new ideas to use teas in the series “PossibiliTEAs”.
Today, I want to try to make dukkah using specialty green tea, specialty sesame produced by a tea farmer, and local food consisting of skipjack tuna.
Dukkah is an Egyptian condiment and generally consists of harbs, nuts and spices. In the introductive movie, the instructor uses sesame, coriander seeds, salt, black peppers, cinnamon, cumin seeds and hazelnuts.
In Japan, a fancy import shop “KALDI” started to sell “Dukkah” from May 2015. It contains sesame, coriander seeds, salt, cumin seeds, hazelnuts, cashew nuts, pecan nuts and pine nuts.
For the Makinohara style of dukkah, I want to use local ingredients as follows!
- Specialty green tea : 1st flush green tea produced by OHTA Yoshitaka, the president in Hchi Ohta.
- Specialty sesame : “Nagomi SHIZU-KA” produced by OGASAWARA Kazutomi.
- Specialty skipjack tuna (dried flake) : “Bari Katsuo Kun”.
These ingredients is mixed and crushed by using a Japanese grind apparatus “Suribachi” as shown in the below.
Roasting green tea and sesame by a toaster before mixing make their aroma more rich and roasty. Please try it as you like.
Let’s eat! Please dip some bread to olive oil and then dredge it to the “Makinohara dukkah”.
In the movie above, she mixed olive oil and the dukkah and dip the bread to it. The difference is just because of my preference. Please try as your preference.
In addition, there are various possibilities to enjoy Makinohara dukkah.
It is also nice way to sprinkle the dukkah to various stuff, such as crackers with sour cream or cheese as shown in the below. When I try these crackers with sour cream and Makinohara dukkah, I’m very eager to taste full-bodied wine! (Unfortunately I didn’t have any wine in that time (>_<) )

This green tea was introduced in the previous post. - Specialty sesame “Nagomi SHIZU-KA” produced by OGASAWARA Kazutomi.
A young tea farmer OGASAWARA Kazutomi cultivates sesame on Makinohara upland. His effort made the indigenous sesame popular as the specialty agricultural product in Makinohara area in Shizuoka prefecture. This sesame has rich aroma as indicated in its name. “KA” means “aroma”. (And “SHIZU” indicates this sesame was cultivated in Shizuoka.)Japanese traditional cuisine using this “SHIZU-KA” sesame will be served for lunch in “Uoichi” in Shimada city on 3/8 (tue.) and 3/16(sun.) 2016 as announced in the past post. - “Bari Katsuo Kun” – Dried flakes of specialty skipjack tuna
This snack consists of dried flakes of skipjack tuna and peanuts. Ingredient of skipjack tuna flakes is derived from Suruga-wan bay. This snack had been developed based on the efforts of fishermen’s cooperative and special advisors for local industries. Now this product is very popular to all ages as a snack for children and nibblies for adults.
