On 4th Feb., a workshop was held in order to sophisticate not only the technique of black tea production but also the ability to express how good one’s black tea is.
Kanazawa Yuu made some lecture for 10 participants. She a instructor, consultant and merchant of Japanese tea. As a consultant, she is very good in expression ability to explain, represent the goodness in teas to make us understood and sympathized. I was impressed her choice of words.
At first, all participants taste the flavor of different types of foreign black tea in order to share criteria to evaluate and express black teas.
Participants checked aroma and taste of each black tea.
Ms. Kanazawa explained fetures of each black tea.
Then, tea farmers evaluated, advised on their black teas each other and discussed extensively with having fun.
Yamamoto-san advised a young tea farmer, Shibamoto-san.
Shibamoto-san tried to express the originality and advantages of his own black tea, based on the advice from Yamamoto-san. Takeuchi-san enjoyed discussing with Miura-san.
During the wait time for brewing, discussion or information sharing had been going on.
Ms. Kanazawa told us how we should express efficiently to make customers or guests to share our feeling or to understand the details of black teas, which are often somehow ambiguous and we feel differently each other. She can extract of an essence of the details of black tea.
After the workshop, I bought black teas from tea farmers. I’d like to try to express the features of them based on the lesson in this day!. I’ll write on “My Sweet Ambers” soon.
