In the circumstance we should stay at home for slowing the spread of viral disease caused by SARS-CoV 2, we have longer time for indoor activities. Various athletes, musicians, artists and creators uploaded their creative works online for sharing ideas perfect to indoor activities. As one of tea enthusiasts, I’d like to recommend to develop tea recipes as one of the indoor activities.
The photo of fantastic landscape got from a trader of Yabusaki-en remind me my tea recipe, which was made by using Specialty Gyokuro tea produced in Okabe tea estate and got a special prize in the contest of tea recipe in Japan held in 2019. In this post, I’d like to share my recipe using specialty Gyokuro tea produced by Yabuski-en and their cooperated tea farmers in Okabe tea estate. I hope my recipe can inspire and help you to develop new and unique tea recipes more and more.
Gyokuro-Dashi Soup and Tea Dishes for Soba Noodle
1. Ingredients
Ingredients used for the recipe are as follows
Gyokuro green tea : 20g (loose leaf tea)
Dried Konbu kelp : approx. 10g
Soba noodle : 400g (for 4 persons)
Sesame : As you like
Miso paste : As you like
Garlic : As you like
Chili-pepper : As you like
Olive oil : As you like
Salt : As you like
As for the loose leaf tea of Gyokuro is bought in a tea shop “COMO”, the retail shop of Yabusaki-en, which lines specilaty teas produced by mastercrafts tea farmers in Okabe tea estate in Shizuoka prefecture. The shop introduces the mastercraftsmen of sophisticated skill of tea farming in its inside as follow.
The appearance of the Gyokuro is absolutely profound, shaped tightly like needle with bright green color.
2. Procedure
(1) Brew Gyokuro with dried Konbu kelp for “Dashi” soup
(2) Separate tea leaves and kel
(3) Prepare tea dishes
< Goma-ae >
Grind sesame, and then mix tea leaves with the ground sesame. Then top some salt.
< Miso-ae>
Mix Gyokuro leaves with miso paste. Top fried chili-pepper as you like.
< Piri Kara Itame >
Fry tea leaves with kelp, hot chilipepper and garlic.
(4) Boil Soba noodle and dish up with the tea dishes.
This recipe won the special prize in the 25th Tea Recipe Contest in Japan, which was held by the Society of Tea Cooking with Prof. Omori in 2019. In this year, the society is currently recruiting the submission of new tea recipes till 2th May.
