1899 is an unique hotel having an interesting philosophy to provide guests with spiritual liberation from the noise of city through tea culture in Japan.
The hotel puts their significance on tea culture and the related hospitality to provide us with spiritual serenity. In my opinion, this mind is similar to the philosophy of Sen no Rikyu, who seemed to be eager to let the minds of Japanese at the period to be more serenate through Chanoyu tea ceremony.
As a year-end party, I visited the Deli-Bar in 1899 with colleagues. At first, toasting with matcha beer!
I felt as if it removed my tiredness accumulated in this year.
There are various appetizers, which are colorful and stimulating our appetite.
Some of them contains teas such as matcha, Tencha, hojicha, smoked tea etc.
3 types of sausages containing 3 types of tea
These sausages contain green tea, hojicha and smoked tea. I guess the smoked tea is “Kyobancha”. We could enjoy the richness of sausages with 3 flavors of tea from umami-rich taste to smoky strong taste.
Liver pate mixed with matcha
The green liver pate has richness derived from liver itself and matcha. It goes well with Japanese Sake.
