“CHAKURA”, the retail division of Kikusui Tea Production Cooperative, made a sale of their teas in World Tea Festival 2016.
Mr. Murata, the division head, promoted their first flush teas and black tea “KOHAKU” to visitors.
Served tea of first flush was brewed by using “filter-in-bottle” as shown below.
This bottle became popular because of its advantage in easy preparation. In addition, the flavor of tea infused by using it is so delicious as well as using “Kyusu”, Japanese traditional tea pot.
It was hot, so the style of ice-cooling was perfect for visitor to enjoy the cold-extracted tea.
In this event, they provided “self-packing” of stem teas of first flush.
I tried it soon. The aroma of this stem tea is very sweet and the first infusion is also sweet with fresh green aroma!!
Stem tea of first flush has higher content of amino acid and reducing sugar.
Thus, it is expected that proper firing can result in more sweet aroma due to Maillard reaction.
I’ll try self-firing for the stem tea at home!!
