Sun Rouge Vinegar & Pickles Perfect to Summer Meals

Sun Rouge Vinegar and Pickles can be made at home easily and highlight meals by its bright red color!

Sun Rouge’ is one of tea cultivars and it has higher content of anthocyanins, resulting in the purple color of infusion. The color of infusion can be changed to reddish by addition of acids, such as citrus juices (citric acid), vinegar (acetic acid), carbonate etc. due to the conformation change of anthocyanins.

< How to make Sun Rouge Vinegar and Pickles >
(1) Put slices of vegetables (e.g. white radish, fresh onion etc.)
(2) Sprinkle sugar onto vegetables in the bottle as we like.
(3) Put loose leaf tea of ‘Sun Rouge’ into the bottle.
(4) Soak them with vinegar.

The vinegar turns pink to red after a few hours. Soaking for a few day can color the inside vegetables to pale red.

The pale red brightness makes pickles look more savory.

In addition, the pale crimson vinegar goes very well with fried fishes! The combination is guaranteed traditionally. ‘Sun Rouge’ can provide a new aspect for the traditionally popular combination of fried fish and vinegar.

The combination of ‘Sun Rouge’ vinegar & pickles with fired fish was so yummy that I cannot to suppress my desire to add a cup of beer!
